  • 4 large organic sweet potatoes, peeled and cubed
  • 23 tablespoons extra virgin olive oil
  • 1/2 cup almond milk (or your choice of plant-based milk)
  • 1/3 cup organic brown sugar
  • 1/4 cup pure maple syrup
  • 1 cup organic raisins, soaked and drained
  • 2 cups vegan marshmallows
  • 1 1/2 cups raw pecans

Instructions

  1. Boil the peeled and cubed sweet potatoes in salted water until fork-tender, about 15-20 minutes. Drain.
  2. In the pot, mash the sweet potatoes with olive oil, almond milk, vanilla extract, butter, brown sugar, cinnamon, nutmeg, and allspice until smooth.
  3. Gently fold in soaked raisins and half of the vegan marshmallows.
  4. Transfer the mixture to a greased baking dish. Top with remaining marshmallows and raw pecans.
  5. Bake at 350°F (175°C) for 30-40 minutes until hot and bubbly with a golden top.
  6. Drizzle extra maple syrup over the casserole before serving.
