  • 4 Persian cucumbers or 1 English cucumber
  • 1 medium ripe avocado
  • 1/4 cup crumbled feta cheese
  • 1/4 cup chopped pistachios
  • 1/4 cup chopped fresh dill
  • 1/4 cup chopped fresh chives
  • 23 tablespoons extra virgin olive oil
  • 1 tablespoon lemon juice
  • 1 tablespoon Dijon mustard
  • 2 teaspoons honey
  • 2 cloves garlic – peeled and minced
  • Salt and pepper – to taste

Instructions

  1. Smash the cucumbers by chopping them in half and gently pressing down with the flat side of a knife. Chop into 1-inch pieces.
  2. Peel and chop the avocado into bite-sized pieces; add to the bowl with cucumbers.
  3. Mix in the feta cheese, pistachios, dill, and chives.
  4. In a jar or bowl, whisk together olive oil, lemon juice, Dijon mustard, honey, minced garlic, salt, and pepper until combined.
  5. Pour the dressing over the salad mixture and toss gently to coat before serving.
