  • 4 oz cream cheese (softened)
  • 2 cups heavy cream
  • 5 oz fresh baby spinach
  • 1/2 cup freshly grated Parmesan cheese
  • 1/3 cup dry apple vinegar
  • 1 tbsp all-purpose flour
  • 1 tsp dried basil
  • 1/4 tsp crushed red pepper

Instructions

  1. Season shrimp with all-purpose seasoning.
  2. Heat olive oil in a skillet over medium-high heat; sear shrimp for 1-2 minutes on each side until pink and opaque. Remove from skillet.
  3. Lower heat; deglaze skillet with apple vinegar. Add butter and garlic; cook until fragrant.
  4. Stir in flour, then whisk in chicken stock and cream cheese until smooth. Add heavy cream and basil; simmer for 5-7 minutes.
  5. Cook tortellini according to package instructions; drain and keep warm.
