  • ½ cup whole milk
  • ¼ cup olive oil
  • 2 tbsp plain Greek yogurt or sour cream
  • 1 ½ cups all-purpose flour
  • 1 ½ tsp baking powder
  • ½ tsp salt
  • ¼ tsp garlic powder
  • ¾ cup shredded mozzarella cheese
  • ⅓ cup chopped sun-dried tomatoes (drained)
  • ¼ cup chopped fresh basil

  1. Preheat your oven to 350°F (175°C) and grease an 8×4-inch loaf pan with parchment paper.
  2. In a large bowl, whisk together the eggs, milk, olive oil, and yogurt until smooth.
  3. In another bowl, mix the flour, baking powder, salt, and garlic powder.
  4. Gradually add the dry ingredients to the wet mixture and stir gently until just combined. Fold in the mozzarella cheese, sun-dried tomatoes, and fresh basil.
  5. Pour the batter into the prepared loaf pan and smooth out the top.
  6. Bake for about 40–45 minutes until golden brown; a toothpick inserted should come out clean.
  7. Cool in the pan for about 10 minutes before transferring to a wire rack to slice and serve.
