  • ½ pound ground turkey
  • 1 tablespoon olive oil
  • ½ large onion (diced)
  • 3 cups kale (cleaned and chopped)
  • 1 tablespoon garlic (minced)
  • 2 stalks celery (chopped)
  • ½ large apple (chopped)
  • Fresh herbs: thyme, sage, rosemary
  • 2 tablespoons walnuts or pecans
  • ½ cup crumbled feta cheese

Instructions

  1. Preheat your oven to 400°F.
  2. Halve the acorn squash and scoop out the seeds. Place cut side down on a lined cookie sheet and bake for about 20 minutes until fork-tender.
  3. In a skillet over medium heat, cook ground turkey until browned; remove from pan.
  4. Sauté onions in the same skillet until softened, then add kale, garlic, celery, apple, and herbs; cook until combined.
  5. Mix roasted squash flesh into the vegetable mixture and season to taste.
  6. Fill each squash half with the mixture, top with feta cheese and nuts, then return to the oven for another 15 minutes.
