  • 89 medium starchy potatoes, thinly sliced
  • 1 head garlic, roasted
  • 1 cup heavy cream
  • 1/4 cup whole milk
  • 1 tablespoon unsalted butter
  • 1 teaspoon fresh thyme leaves
  • 1/4 teaspoon nutmeg
  • 1/2 cup grated parmesan cheese
  • 2 cups shredded Gruyère or mozzarella cheese
  • Salt and pepper to taste
  • Fresh chives, for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Roast the garlic by cutting off the top of the head, drizzling with olive oil, wrapping in foil, and baking for about 30 minutes.
  3. Grease a 9×13-inch baking dish with butter.
  4. Thinly slice the potatoes using a mandoline for even cooking.
  5. In a saucepan over medium heat, combine heavy cream, milk, butter, half of the parmesan cheese, thyme, nutmeg, salt, and pepper until melted but not boiling.
  6. Squeeze out roasted garlic cloves into a bowl and mash into a paste; mix this into the cream mixture.
  7. Layer potato slices in the baking dish and pour the creamy mixture over them.
  8. Cover with foil and bake for 40 minutes; uncover, sprinkle remaining cheeses on top, and bake for another 30 minutes until golden brown.
