  • 1 tsp olive oil
  • 2 pounds red potatoes
  • Kosher salt
  • 6 tablespoons butter
  • 3/4 cup half and half

Instructions

  1. Preheat your oven to 375°F (190°C). Cut off the top of the garlic head, drizzle with olive oil, wrap in foil, and roast for about an hour until golden.
  2. In a large pot, place quartered red potatoes and cover with cold water. Add salt and bring to a boil, cooking until fork-tender.
  3. Drain the potatoes and return them to the pot. Squeeze roasted garlic cloves from their skins into the potatoes.
  4. Warm half and half along with butter until melted; pour over potatoes and season with salt and pepper. Mash until creamy but leave some lumps for texture.
