  • 2 cups cherries, halved and pitted
  • 1 1/3 cups white granulated sugar
  • 2 large eggs
  • 1 egg yolk
  • 5 tbsp unsalted butter, melted
  • 1/3 cup canola or vegetable oil
  • 1 tsp pure vanilla extract
  • 3/4 cup all-purpose flour
  • 3/4 cup Dutch process cocoa powder
  • 1 tbsp cornstarch
  • 1 tsp salt
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat oven to 400°F. Line a baking sheet with parchment paper, spread cherry halves on it, sprinkle with sugar, and roast for about 10 minutes.
  2. Lower oven temperature to 325°F. Prepare an 8×8 baking pan by spraying with non-stick spray and lining it with parchment paper.
  3. In a bowl, sift together flour, cocoa powder, cornstarch, and salt; set aside.
  4. Beat sugar, eggs, and egg yolk with a mixer until light and fluffy (about five minutes).
  5. Add melted butter, oil, and vanilla to the egg mixture on low speed. Gently fold in dry ingredients using a rubber spatula.
  6. Fold in half of the roasted cherries and chocolate chips.
  7. Pour batter into the prepared pan, smooth out evenly, and bake for 40-50 minutes until edges are set but center remains slightly underdone.
  8. Let cool completely before slicing into squares.
