  • ½ cup butter (room temperature)
  • 2 cups granulated sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 1 cup milk
  • 1/2 cup cold butter, cubed (1 stick)
  • 1 cup light brown sugar
  • 1 cup flour
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9 x 13-inch baking dish.
  2. In a large bowl, whisk together the flour, baking powder, salt, and spices.
  3. In an electric mixer bowl, beat together the butter and pumpkin puree until combined. Add the sugar, eggs, and vanilla; mix until well incorporated.
  4. Gradually add the dry ingredients to the wet mixture alternately with milk until just combined.
  5. For the crumb topping, combine cold butter, brown sugar, flour, cinnamon, and nutmeg until crumbs form.
  6. Pour half of the batter into the prepared dish, sprinkle half of the crumbs on top, layer on the remaining batter followed by remaining crumbs.
  7. Bake for 45–55 minutes or until a toothpick comes out clean.
