  • ½ Cup pumpkin puree
  • 1 egg (large)
  • 1 Teaspoon vanilla extract
  • 2 ¼ Cups all-purpose flour
  • 1 Teaspoon baking soda
  • 1 Teaspoon pumpkin pie spice
  • ½ Teaspoon salt
  • 1 Cup chocolate chips
  • 1 Cup mini vegan marshmallows
  • 8 graham cracker pieces (broken into small pieces)

Instructions

  1. Preheat your oven to 350°F and line a baking sheet with parchment paper.
  2. Cream together room temperature butter, brown sugar, and granulated sugar until light and fluffy.
  3. Beat in pumpkin puree, egg, and vanilla extract until well combined.
  4. In another bowl, whisk flour, baking soda, pumpkin pie spice, and salt together.
  5. Gradually add dry ingredients to wet ingredients until just mixed.
  6. Fold in chocolate chips, vegan marshmallows, and graham cracker pieces.
  7. Scoop rounded tablespoons of dough onto the prepared baking sheet, spacing them two inches apart.
  8. Press in extra marshmallows and chocolate on top before baking.
  9. Bake for 12 to 14 minutes until edges are golden but centers remain soft.
  10. Cool on the baking sheet for a few minutes before transferring to a wire rack.
