  • 1½ cups ricotta cheese
  • 1⅓ cups pumpkin purée
  • 4 sweet onions
  • 1 cup cooked chicken, chopped
  • Fresh sage leaves
  • Egg wash (2 large eggs + 2 tsp water)
  • Grated Parmesan cheese

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a skillet, cook chopped chicken until golden; set aside.
  3. In the same skillet, caramelize sliced onions over medium-low heat for 25–30 minutes until browned. Stir in apple cider and cook for another 5 minutes.
  4. Roll out puff pastry on a floured surface and score a border around the edges.
  5. In a bowl, mix ricotta cheese with pumpkin purée; season with salt and pepper.
  6. Spread the pumpkin mixture onto the pastry base. Layer with caramelized onions and chicken, then sprinkle with fresh sage.
  7. Brush the edges with egg wash and bake for 25–30 minutes until golden brown.
  8. Sprinkle grated Parmesan over the hot tart before serving.
