  • 1 cup granulated sugar
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 (3.4 oz) box instant pistachio pudding mix
  • 1 1/2 cups milk
  • 1/2 cup heavy cream
  • 1/4 cup chopped pistachios (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a 9×13-inch baking pan by greasing or lining.
  2. In a large bowl, cream softened butter and sugar until light and fluffy. Add egg and vanilla extract, mixing well.
  3. In another bowl, whisk together flour, baking powder, and salt. Gradually incorporate into the butter mixture until just combined.
  4. Press dough evenly into the prepared pan and bake for 12–15 minutes or until golden at the edges. Let cool completely.
  5. In a separate bowl, whisk instant pistachio pudding mix with milk and heavy cream until thickened (about 5-10 minutes). Spread over cooled cookie base.
  6. Garnish with chopped pistachios, pressing gently into the pudding layer.
  7. Chill for at least 2 hours before cutting into squares.
