  • 1 tsp. pure vanilla extract
  • 1/4 tsp. kosher salt
  • 1 sleeve graham crackers, finely crushed
  • 5 tbsp. butter, melted
  • 1/4 cup packed brown sugar
  • Pinch of kosher salt
  • 4 tbsp. butter (for topping)
  • 1/2 cup packed brown sugar (for topping)
  • 1/2 tsp. ground cinnamon
  • 1/4 cup heavy cream (for topping)
  • 1 3/4 cups whole or chopped pecans

Instructions

  1. Preheat oven to 325ºF and grease an 8" or 9" springform pan.
  2. Beat cream cheese and brown sugar until smooth; incorporate eggs one by one, followed by sour cream, flour, vanilla extract, and salt.
  3. Combine crushed graham crackers with melted butter and brown sugar; press firmly into the pan.
  4. Pour cheesecake mixture over crust; wrap the pan in foil and bake for about 90 minutes until slightly jiggly.
  5. Cool in the oven with the door ajar for an hour before refrigerating for at least five hours.
  6. For topping, melt butter and brown sugar in a skillet; stir in cinnamon, heavy cream, and pecans until coated.
  7. Serve topped with pecan mixture.
