  • ¾ cup granulated sugar (divided)
  • 1 tablespoon lemon juice
  • 2 teaspoons cornstarch
  • 1 teaspoon vanilla extract
  • ½ teaspoon ground cinnamon (optional)
  • 1 cup all-purpose flour
  • ½ cup granulated sugar
  • 1½ teaspoons baking powder
  • ¼ teaspoon salt
  • ½ cup cold unsalted butter (cut into small cubes)
  • ¼ cup boiling water
  • 1 tablespoon coarse sugar for topping (optional)

Instructions

  1. Preheat your oven to 375°F.
  2. In a large bowl, combine sliced peaches, ¾ cup sugar, lemon juice, cornstarch, vanilla extract, and cinnamon. Let sit for about 10 minutes.
  3. In another bowl, mix flour, remaining sugar, baking powder, and salt. Cut in the cold butter until the mixture resembles coarse sand.
  4. Stir in boiling water until a thick dough forms.
  5. Pour peach filling into a greased baking dish and spoon the biscuit topping over it.
  6. Sprinkle coarse sugar on top if desired and bake for about 38 to 42 minutes until golden brown and bubbly.
  7. Allow cooling for at least 15 minutes before serving.
