  • 1 stick butter (1/2 cup)
  • 2 lbs red potatoes (washed)
  • 1/3 cup grated Parmesan cheese
  • 3 tablespoons herb seasoning (divided)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Nonstick cooking spray

Instructions

  1. Preheat your oven to 400°F (200°C) with a stick of butter in a 9×13 baking pan to melt.
  2. While the butter melts, cut the washed red potatoes in half and score each lightly.
  3. In a bowl, mix grated Parmesan cheese with 2 tablespoons of herb seasoning, salt, and pepper.
  4. Once the butter is melted, sprinkle the seasoning mixture in the pan and place scored potatoes cut-side down on top.
  5. Spray tops with nonstick cooking spray and sprinkle with remaining herb seasoning.
  6. Bake uncovered for about 40 minutes or until tender and golden brown.
