  • 1 medium onion
  • 2 tablespoons avocado oil
  • 1 ½ teaspoons salt
  • 1 teaspoon smoked paprika
  • ½ teaspoon onion powder
  • ½ teaspoon dried thyme
  • ½ teaspoon garlic powder
  • ½ teaspoon ground black pepper

Instructions

  1. Preheat oven to 425ºF (218ºC).
  2. Let the chicken sit at room temperature for 30-60 minutes.
  3. Line a roasting pan with parchment paper and place the chicken breast side up.
  4. Stuff the cavity with halved onions.
  5. Mix avocado oil, salt, paprika, onion powder, thyme, garlic powder, and black pepper into a paste.
  6. Coat the chicken thoroughly with the seasoning paste.
  7. Roast for 70-90 minutes until the internal temperature reaches 165ºF (74ºC).
  8. Allow to rest for five minutes before carving.
