  • 1 whole chilled duck
  • ½ teaspoon sea salt
  • ½ teaspoon garlic powder
  • ½ teaspoon oregano, dried
  • ½ teaspoon thyme, dried
  • ½ teaspoon cracked black pepper
  • 1 sprig rosemary, fresh
  • 2 sprigs thyme, fresh
  • ½ cup orange juice
  • 2 tablespoons fig jam
  • 2 tablespoons maple syrup
  • 1 tablespoon soy sauce or coconut amino acids
  • 1 teaspoon balsamic vinegar
  • 1 tablespoon corn starch

Instructions

  1. Preheat oven to 375°F (190°C). Pat the duck dry with paper towels; season with sea salt, garlic powder, oregano, thyme, and cracked black pepper.
  2. Place the duck on a roasting pan breast side up. Roast for about 90 minutes until skin is golden brown and crispy, draining excess fat halfway through.
  3. While roasting, combine orange juice, fig jam, maple syrup, soy sauce (or coconut amino acids), balsamic vinegar, and corn starch in a saucepan over medium heat to make the glaze; stir until thickened.
  4. Brush the glaze over the duck during the last 10-15 minutes of roasting to caramelize.
  5. Once cooked to an internal temperature of 165°F (74°C), let rest for 10 minutes before carving.
