  • 1 lb boneless, skinless chicken breast
  • 2 tablespoons olive oil
  • 1½ cups long-grain white rice
  • 1 can (10 oz) Rotel diced tomatoes with green chilies
  • 2¼ cups chicken broth
  • 1 cup nacho cheese sauce
  • 1½ cups shredded cheddar cheese

Instructions

  1. In a large pot, heat olive oil over medium heat. Add chicken pieces along with garlic powder, onion powder, chili powder, cumin, salt, and pepper. Sauté for 5–6 minutes until the chicken is nearly cooked through.
  2. Stir in uncooked rice and the entire can of Rotel (juices included). Toast for 1–2 minutes.
  3. Pour in chicken broth and bring to a boil. Reduce heat to low, cover, and simmer for 20–25 minutes until rice is tender.
  4. Stir in nacho cheese sauce and 1 cup of shredded cheese until melted and creamy.
  5. Top with remaining cheese, cover for another 5 minutes until melted, then garnish with optional toppings before serving.
