  • 1/2 teaspoon fine table salt
  • 2 tablespoons holiday spice mix
  • 1/3 cup white sugar
  • 1 cup fruitcake fruit blend or dried fruit
  • 1/2 cup candied mixed peel
  • 1 large egg
  • 1 cup buttermilk or plain yogurt
  • 3/8 cup melted butter
  • Non-melting sugar or powdered sugar for dusting

Instructions

  1. Preheat your oven to 375°F (190°C) and line a muffin pan with paper liners.
  2. In a large bowl, whisk together flour, baking powder, baking soda, salt, and holiday spice mix.
  3. In another bowl, combine sugar, egg, buttermilk (or yogurt), and melted butter (reserve two tablespoons). Mix until smooth.
  4. Fold the wet ingredients into the dry ingredients gently until just combined; avoid overmixing.
  5. Add the dried fruit blend and candied peel to the batter and mix gently.
  6. Spoon the batter into muffin cups until about three-quarters full and bake for 20 minutes or until golden brown.
  7. Cool in the pan for five minutes before transferring to a wire rack and dusting with powdered sugar.
