  • 2 cups all-purpose flour
  • 1 cup packed brown sugar
  • 1 cup cold butter
  • 5 large eggs
  • 1 cup dark corn syrup
  • ⅔ cup granulated sugar
  • 1 teaspoon vanilla extract
  • ⅛ teaspoon salt
  • 2 cups chopped pecans

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly spray two 12-cup muffin tins with non-stick cooking spray.
  2. In a large bowl, mix flour and brown sugar. Cut in cold butter until the mixture resembles coarse crumbs. Press firmly into each muffin tin cup.
  3. In another bowl, whisk together eggs, dark corn syrup, granulated sugar, vanilla extract, and salt until smooth. Stir in chopped pecans.
  4. Pour filling into each crust until three-quarters full. Bake for about 40 minutes or until set.
  5. Allow to cool in the tins for at least 10 minutes before transferring to a wire rack.
