  • ½ to 1 cup vegetable broth
  • 2 15-oz cans butter beans (drained)
  • 1 cup chopped fresh spinach
  • 1 cup heavy cream (or coconut milk for a lighter version)
  • ½ cup grated parmesan (or nutritional yeast for a vegan option)
  • 2 Tbsp chopped fresh basil
