  • 1 cup packed brown sugar
  • 1/2 cup evaporated milk
  • 8 tablespoons unsalted butter (4 cubed + 4 for mixing)
  • 1/4 cup boiling water
  • 1 1/2 cups toasted and coarsely chopped pecans
  • 1 cup granulated sugar

Instructions

  1. Prepare your baking sheet by lining it with aluminum foil and spraying it with nonstick cooking spray.
  2. In a medium saucepan over medium heat, combine the granulated sugar, brown sugar, and evaporated milk. Stir until sugars dissolve completely.
  3. Attach a candy thermometer and continue stirring until the mixture reaches 240°F (soft ball stage).
  4. Remove from heat and add the cubes of butter on top without stirring; let sit for one minute.
  5. Stir in vanilla extract and toasted pecans until the mixture thickens and lightens in color.
  6. Quickly drop spoonfuls onto the prepared baking sheet before the mixture sets.
  7. Allow pralines to cool at room temperature for about 30 minutes until hardened.
