  • 2 tablespoons cornstarch (or sifted cake flour)
  • 1 teaspoon vanilla extract (or zest of one lemon)

  1. Preheat your oven to 325°F (160°C) and line an 8-inch springform pan with parchment paper.
  2. Separate the egg whites from the yolks and whip the whites in a clean bowl until frothy. Gradually add 1/3 cup sugar until stiff peaks form.
  3. In another bowl, whisk together egg yolks, yogurt, vanilla extract (or lemon zest), cornstarch, and salt until smooth.
  4. Gently fold the whipped egg whites into the yogurt mixture in parts, being careful not to deflate the batter.
  5. Pour the batter into the prepared pan and place it inside a larger tray filled with hot water. Bake for about 50–60 minutes until golden brown.
  6. Turn off the oven and let the cake rest inside for an additional 15 minutes before removing.
