  • 1 ball Easy pizza dough
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon water
  • 1 tablespoon fresh parsley, chopped
  • 1 small garlic clove, grated
  • 1 teaspoon lemon zest
  • 2 tablespoons grated parmesan cheese
  • 150 grams fresh mozzarella (or shredded firm mozzarella)
  • Freshly ground black pepper, to taste
  • 1 teaspoon lemon juice
  • ¼ teaspoon fine salt

Instructions

  1. Preheat your oven and prepare your pizza dough.
  2. Slice the fresh mozzarella into pieces and pat dry to remove excess moisture.
  3. Roll out the dough on parchment paper into a rectangle.
  4. In a jar, combine olive oil, water, parsley, garlic, lemon zest, salt, and pepper; shake to mix.
  5. Create dimples in the dough and drizzle the brine mixture over it.
  6. Add mozzarella pieces evenly on top.
  7. Bake for about 8-10 minutes until golden brown.
  8. Finish with fresh lemon juice and a sprinkle of parmesan before serving.
