Ingredients

Scale
  • 4 sea bass fillets (about 6 oz each)
  • 4 cloves garlic, minced
  • Zest of 1 lemon
  • 2 tbsp lemon juice
  • 4 tbsp unsalted butter
  • Salt and pepper, to taste
  • 2 tbsp olive oil
  • Fresh parsley, chopped (for garnish)
  • 10 oz fresh spinach
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Preheat your oven to 400°F (200°C). Pat the sea bass fillets dry and season with salt and pepper.
  2. In a small bowl, mix minced garlic, lemon zest, lemon juice, and melted butter; set aside.
  3. Heat olive oil in an oven-safe skillet over medium-high heat. Sear the sea bass fillets for about 2-3 minutes on each side until golden brown. Spoon the lemon-garlic mixture over the fish while cooking.
  4. Transfer the skillet to the oven and bake for about 8-10 minutes until flaky.
  5. In another skillet, melt butter over medium heat; add onion and garlic until softened. Add spinach until wilted, then stir in heavy cream, Parmesan cheese, salt, pepper, and nutmeg if using; cook until slightly thickened.
  6. Serve by placing creamed spinach on plates topped with the sea bass fillets garnished with parsley.
