  • 1/2 cup granulated sugar
  • 1/2 teaspoon baking powder
  • 1/2 cup unsalted butter, melted
  • 1/4 teaspoon salt
  • 2 large eggs
  • 1 cup granulated sugar
  • 1/4 cup all-purpose flour
  • 1/3 cup fresh lemon juice
  • 1 tablespoon lemon zest

Instructions

  1. Preheat your oven to 350°F (175°C). In a bowl, combine 1 ½ cups of flour, ½ cup of sugar, ½ teaspoon of baking powder, melted butter (½ cup), and salt (¼ teaspoon) until crumbly. Reserve ½ cup for topping.
  2. Press the remaining mixture into the bottom of an 8×8-inch baking pan lined with parchment paper. Bake for 12-15 minutes until lightly golden.
  3. In another bowl, whisk together 2 large eggs, 1 cup of sugar, ¼ cup of flour, fresh lemon juice (⅓ cup), and lemon zest (1 tablespoon) until smooth.
  4. Pour the lemon mixture over the baked crust and sprinkle with reserved crumbs. Bake for an additional 20-25 minutes until set.
  5. Allow to cool completely before refrigerating for at least an hour. Cut into squares before serving.
