  • 1/2 cup breadcrumbs (preferably panko)
  • 1/4 cup finely chopped red onion
  • 2 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh mint, chopped
  • 1 tsp dried oregano
  • 1 tsp ground cumin
  • 1 egg
  • 1 cup Greek yogurt
  • 1/2 cucumber, grated and excess water squeezed out
  • 1 clove garlic, minced
  • 1 tbsp fresh lemon juice
  • 1 tbsp olive oil

Instructions

  1. In a large bowl, mix ground chicken, breadcrumbs, red onion, garlic, parsley, mint, oregano, cumin, salt, and pepper.
  2. Add the egg and gently combine until just mixed.
  3. Shape the mixture into 20 meatballs (about 1 to 1.5 inches in size).
  4. Heat olive oil in a skillet over medium heat. Cook meatballs in batches until golden brown on all sides (about 4-5 minutes per side).
  5. Place cooked meatballs on paper towels to absorb excess oil.
  6. For the tzatziki sauce: Combine Greek yogurt, grated cucumber, garlic, lemon juice, olive oil, salt, and pepper in a bowl. Mix well and chill before serving.
  7. Serve warm meatballs with tzatziki sauce for dipping.
