  • 2 links spicy Italian sausage (or turkey/chicken)

  • 1 fennel bulb (sliced)
  • 1 large parsnip (diced)
  • 1 medium carrot (diced)
  • 1 rib celery (diced)
  • 4 cloves garlic (pressed)
  • 1 can whole tomatoes (chopped)
  • 1 can navy beans (rinsed)
  • 6 cups chicken stock/broth
  • 1 cup chopped kale
  • Squeeze of lemon

Instructions

  1. Cook gnocchi according to package instructions; set aside.
  2. In a large pot, heat oil over medium-high heat. Add crumbled sausage and brown for several minutes.
  3. Stir in leeks, fennel, parsnip, carrot, celery, salt, pepper, and Italian seasoning; sauté until tender.
  4. Add garlic, then tomatoes and navy beans; pour in chicken stock/broth.
  5. Cover and simmer for about 20 minutes until flavors meld.
  6. Stir in kale, parsley, and lemon juice before serving over gnocchi.
