  • 8 chicken thighs
  • ½ head cabbage, chopped
  • 4 potatoes, sliced
  • 1 medium onion, sliced
  • ½ cup chicken stock
  • 1 ½ teaspoons thyme
  • 1 teaspoon smoked paprika
  • ½ teaspoon salt
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • ¼ teaspoon black pepper

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, mix thyme, smoked paprika, salt, onion powder, garlic powder, and black pepper. Coat the chicken thighs evenly with the dry rub.
  3. In a large sauté pan over medium heat, sear the chicken thighs until golden brown on both sides.
  4. Remove excess fat from the pan and sauté the chopped cabbage for 2–3 minutes until wilted.
  5. Add sliced potatoes and onions to the pan along with chicken stock; stir well.
  6. Return chopped bacon (or substitute) back into the mixture and place the seared chicken on top.
  7. Transfer the pan to the oven and bake for 45–50 minutes or until chicken reaches an internal temperature of 165°F (75°C).
