- 4–6 ounce salmon filets
- 3 tablespoons low sodium soy sauce or tamari
- 2 tablespoons honey
- 2 tablespoons sriracha
- 2 teaspoons minced garlic
- 3 tablespoons water
- 2 cups cooked white rice
- 1 avocado
- 1 cucumber (sliced)
- 1 cup edamame (cooked)
- 1/2 cup sriracha mayo
- Cut salmon into 1-inch cubes.
- In a bowl, whisk together soy sauce, honey, sriracha, garlic, and water to create the marinade.
- Add cubed salmon to the marinade and let it sit for at least 20 minutes.
- Heat a skillet over medium-high heat. Add oil and then the marinated salmon, cooking for about 2-3 minutes on each side until crispy.
- Pour in the leftover marinade and cook until thickened.
- Serve over rice topped with avocado, cucumber slices, and edamame.
