  • 1 cup peaches, finely diced (fresh or canned)
  • 1/2 cup milk
  • 8 oz cream cheese, softened
  • 1/4 cup butter, softened
  • 3 cups powdered sugar, sifted
  • 2 tablespoons honey
  • 1 teaspoon vanilla extract
  • 2 tablespoons peach puree (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a 12-cup muffin tin with liners.
  2. In a medium bowl, whisk together the flour, baking powder, and salt.
  3. In another bowl, cream together the softened butter, sugar, and honey until light and fluffy—about 3-4 minutes.
  4. Beat in the eggs one at a time, then mix in the vanilla extract.
  5. Gradually alternate adding the dry mixture and milk into the creamed mixture until just combined.
  6. Gently fold in the diced peaches.
  7. Divide the batter among the cupcake liners until they are about two-thirds full.
  8. Bake for about 18-22 minutes, or until a toothpick inserted comes out clean. Let them cool completely on a wire rack.
  9. While the cupcakes cool, beat together the softened cream cheese and butter until smooth. Gradually mix in honey and vanilla before adding powdered sugar until fluffy.
  10. Frost each cupcake generously with the cream cheese frosting.
