  • 8 ounces baby bella mushrooms
  • 1 cup vegetable oil (for frying shallots)
  • 4 tablespoons unsalted butter
  • 1½ cups chicken broth
  • ½ cup heavy whipping cream
  • ½ cup freshly grated parmesan cheese
  • 4 medium shallots
  • 1 tablespoon garlic (minced or paste)
  • 2 tablespoons all-purpose flour
  • 1 tablespoon fresh lemon juice
  • 2 teaspoons Dijon mustard
  • 1 teaspoon dried thyme
  • 1/2 teaspoon red pepper flakes (optional)
  • 1/4 teaspoon ground nutmeg
  • kosher salt & freshly ground black pepper (to taste)

Instructions

  1. Heat vegetable oil in a deep skillet over medium heat. Fry sliced shallots until golden brown and crispy. Drain on paper towels and season lightly.
  2. Blanch trimmed green beans in boiling salted water for 3-4 minutes; drain and set aside.
  3. In a saucepan, melt butter over medium heat. Sauté mushrooms until browned, add garlic, then flour to create a roux.
  4. Gradually whisk in chicken broth, followed by lemon juice, Dijon mustard, thyme, salt, pepper, nutmeg, and heavy cream.
  5. Combine blanched green beans with the creamy mushroom sauce and transfer to a baking dish. Sprinkle remaining parmesan on top.
  6. Bake at 350°F (175°C) for about 25 minutes until bubbly. Add crispy shallots during the last few minutes of baking.
