  • 4 bell peppers (any color)
  • 1 Tbsp olive oil
  • 4 cups fresh spinach
  • 1 15-oz tub ricotta cheese
  • 1 cup shredded mozzarella cheese
  • ½ cup grated parmesan
  • ½ cup sliced green onions
  • ½ cup chopped fresh basil
  • 2 large eggs
  • ½ cup breadcrumbs

Instructions

  1. Preheat the oven to 400°F (204°C). Cut each bell pepper in half lengthwise, remove seeds, and brush with olive oil. Bake cut side up for about 20 minutes.
  2. Microwave the spinach until wilted (15–30 seconds), then chop and mix with remaining filling ingredients in a large bowl.
  3. Stuff each pepper generously with the ricotta mixture.
  4. Combine breadcrumbs with oil and sprinkle over stuffed peppers.
  5. Bake at 350°F (176°C) for about 30 minutes until golden brown.
