  • 1 tbsp butter
  • 1 leek
  • 2 large carrots (cut into pieces)
  • 2 stalks celery (diced)
  • 2 cloves garlic (pressed)
  • 2 heaped tbsp flour
  • 4 cups chicken stock
  • 2 cups cooked turkey or chicken
  • 2 large potatoes (cut into pieces)
  • 2 bay leaves
  • 1 tbsp fresh thyme leaves
  • Fresh parsley for garnish

Instructions

  1. In a large Dutch oven, melt the butter over medium heat. Add the leeks, carrots, celery, and thyme; sauté for about 5 minutes until softened. Stir in the garlic.
  2. Sprinkle the flour over the veggies and mix well. Gradually add the chicken stock while scraping any bits from the bottom. Season with salt and pepper; bring to a boil.
  3. Add the potatoes, cooked turkey, and bay leaves. Cover and bake in a preheated oven at 350°F (180°C) for approximately 45 minutes.
  4. If desired, stir in cream before serving and garnish with fresh parsley.
