- 2 cups full fat cottage cheese
- 4 large eggs
- 4 tbsp sweetener (erythritol, monk fruit sweetener, honey, or maple syrup)
- 1 tsp vanilla extract
- 2 tbsp cornstarch (or coconut flour)
- 1 ½ cups fresh or frozen berries (blueberries, raspberries, cherries)
- Preheat your oven to 350°F (175°C) and lightly grease a baking dish.
- Blend the cottage cheese until smooth.
- Add eggs, sweetener, vanilla extract, cornstarch, and lemon zest (if using) to the blender; blend until well combined.
- Pour the mixture into the baking dish and bake for 10–15 minutes until edges set.
- Remove from oven and sprinkle berries on top; return to bake for an additional 30–35 minutes until golden.
- Let cool slightly before slicing and serve warm.
