  • 2 cups full fat cottage cheese
  • 4 large eggs
  • 4 tbsp sweetener (erythritol, monk fruit sweetener, honey, or maple syrup)
  • 1 tsp vanilla extract
  • 2 tbsp cornstarch (or coconut flour)
  • 1 ½ cups fresh or frozen berries (blueberries, raspberries, cherries)

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease a baking dish.
  2. Blend the cottage cheese until smooth.
  3. Add eggs, sweetener, vanilla extract, cornstarch, and lemon zest (if using) to the blender; blend until well combined.
  4. Pour the mixture into the baking dish and bake for 10–15 minutes until edges set.
  5. Remove from oven and sprinkle berries on top; return to bake for an additional 30–35 minutes until golden.
  6. Let cool slightly before slicing and serve warm.
