  • 3 bell peppers (red, yellow, or green), sliced
  • 3 cloves garlic, minced
  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • ½ tsp chili powder (optional)
  • ½ tsp salt (or to taste)
  • ½ tsp black pepper
  • ¼ cup low-sodium chicken broth
  • 1 tbsp tomato paste
  • 1 tbsp soy sauce or coconut aminos
  • Juice of ½ lime (optional)
  • Fresh cilantro or parsley, for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat. Sauté diced onions until soft and translucent (about 3 minutes).
  2. Stir in minced garlic and cook for another 30 seconds until fragrant.
  3. Add ground turkey to the skillet; break apart with a wooden spoon and cook until no pink remains (5–6 minutes).
  4. Season the turkey with smoked paprika, cumin, chili powder, salt, and black pepper.
  5. Add sliced bell peppers and sauté for about 3–4 minutes until softened yet crunchy.
  6. Pour in chicken broth along with tomato paste and soy sauce; stir well and let simmer for 2–3 minutes.
  7. Remove from heat and squeeze lime juice over the dish if desired.
  8. Garnish with freshly chopped cilantro or parsley before serving.
