  • ½ batch rough puff pastry or classic puff pastry (or store-bought)
  • All-purpose flour (for work surface)
  • Egg wash (1 egg whisked with 1 teaspoon of water or cream)
  • 1 cup fig jam
  • ½ cup prepared caramelized onions, rough chopped
  • 4 ounces goat cheese
  • 610 sprigs of fresh thyme

Instructions

  1. Preheat your oven to 400ºF. Line a baking sheet with parchment paper.
  2. Roll out the puff pastry to about ⅛-inch thickness and cut into circles using a cutter.
  3. Dock the center of each circle with a fork or smaller cutter.
  4. Assemble on the baking sheet, brushing each with egg wash and adding caramelized onions.
  5. Chill briefly while preparing the goat cheese.
  6. Fill each tart with fig jam and top with goat cheese pieces.
  7. Bake for 12 minutes until puffy; then add jam and cheese before returning to bake for an additional 5-8 minutes until golden brown.
  8. Cool slightly, garnish with thyme leaves, and serve warm or at room temperature.
