  • 1 large bulb of garlic
  • 1.3 kg (2.8 lb) baking potatoes
  • 75 g (5 tbsp) butter
  • 2 tbsp heavy cream
  • 60 g (3/4 cup) freshly grated Parmesan cheese
  • 4 large egg yolks
  • Salt and pepper
  • Olive oil (as needed)

Instructions

  1. Preheat oven to 180°C (356°F). Slice the garlic bulb's tip, drizzle with olive oil, wrap in foil, and roast for 50-60 minutes until soft.
  2. Peel and chop potatoes; boil in salted water until fork-tender (15-20 minutes). Drain and let steam dry.
  3. In a pot, mash the potatoes with melted butter, heavy cream, roasted garlic, Parmesan cheese, salt, and pepper until smooth.
  4. Pipe swirls onto a lined baking tray using a piping bag fitted with a star tip.
  5. Drizzle with melted butter and bake at 200°C (400°F) for 15-20 minutes until golden brown.
