  • 2.53 kg (56 lb) turkey breast, skin on, bone in
  • 12 garlic cloves, smashed
  • Fresh herbs: rosemary, sage, thyme
  • 150 g (10 tbsp) unsalted butter, softened
  • Salt
  • Black pepper

Instructions

  1. Preheat your oven to 200°C (390°F).
  2. Remove turkey from the fridge 45 minutes before cooking.
  3. In a baking dish, place smashed garlic and fresh herbs.
  4. Mix butter with minced garlic, chopped herbs, salt, and pepper.
  5. Loosen turkey skin and spread two-thirds of the butter mixture underneath.
  6. Turn turkey over and apply remaining butter on top.
  7. Roast in the oven until the internal temperature reaches 75°C (165°F), about 1.5 hours.
