  • 1 tbsp Olive Oil
  • 5 Onions (thinly sliced)
  • 1/2 cup Beef Broth
  • 3 cups Heavy Cream
  • 1 cup Grated Parmesan Cheese
  • 300 g Cavatappi Macaroni
  • Fresh Parsley (chopped)

Instructions

  1. Caramelize the Onions: In a large skillet over medium heat, add olive oil and sliced onions. Cook for 30–40 minutes, stirring occasionally until golden brown.
  2. Make the Sauce: Add beef broth to the skillet with caramelized onions and simmer for 10 minutes. In another pot, whisk flour into melted butter, then gradually add heavy cream until thickened. Mix in two-thirds of the onions, salt, pepper, parsley, and Parmesan cheese.
  3. Combine: Cook cavatappi macaroni until just shy of al dente. Stir pasta into the sauce mixture until well combined.
  4. Bake: Transfer to a baking dish, top with remaining onions, and sprinkle breadcrumbs if desired. Bake at 350°F (175°C) for 10–15 minutes until golden.
  5. Serve: Enjoy warm with fresh parsley garnish.
