  • 4 large Yukon Gold potatoes
  • 1 cup shredded Gruyère cheese (or Swiss, cheddar, or mozzarella)
  • ½ cup Parmesan cheese
  • 1 cup heavy cream or whole milk
  • ½ cup beef broth (or vegetable broth)
  • Fresh thyme leaves

Instructions

  1. Sauté the onions in butter and olive oil over medium heat until golden brown (20-30 minutes).
  2. Slice potatoes into ¼-inch rounds.
  3. Preheat oven to 375°F (190°C) and grease a baking dish.
  4. Layer half of the potato slices at the bottom, followed by half of the onions and some Gruyère cheese. Repeat layers.
  5. Pour broth and cream mixture over the top and sprinkle with remaining cheeses.
  6. Cover with foil and bake for 45 minutes; remove foil and bake an additional 15-20 minutes until bubbly and golden.
