  • 2 lbs beef short ribs
  • 3 large yellow onions, thinly sliced
  • 4 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 3 garlic cloves, minced
  • 6 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 bay leaf
  • 1 teaspoon fresh thyme leaves
  • Salt and pepper to taste
  • 6 slices of baguette or crusty bread, toasted
  • 1 ½ cups shredded Gruyère or Swiss cheese

Instructions

  1. Season the short ribs with salt and pepper. Heat olive oil in a large pot over medium-high heat and sear the short ribs on all sides until browned. Remove from pot.
  2. In the same pot, add butter and let it melt. Add sliced onions and cook over low heat for about 30-40 minutes until caramelized.
  3. Stir in minced garlic for one minute. Then add the beef broth, Worcestershire sauce, bay leaf, thyme, and seared short ribs back into the pot. Simmer covered for 2–3 hours until the meat is fork-tender.
  4. Preheat your oven broiler. Remove short ribs from the pot, shred the meat, and return it to the soup. Ladle soup into oven-safe bowls topped with toasted baguette slices and shredded cheese. Broil until bubbly and golden (about 2–3 minutes).
  5. Serve immediately while hot.
