  • 1 cup sour cream
  • 1 cup mayonnaise
  • 8 oz cream cheese, softened
  • 2 cups shredded cheddar cheese
  • 1 cup shredded pepper jack cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon chili powder
  • Salt and black pepper, to taste
  • ¼ cup chopped green onions (optional)
  • ½ cup diced red bell pepper (optional)
  • 1 jalapeño, finely chopped (optional)
  • 2 tablespoons chopped fresh cilantro (optional)

Instructions

  1. Prepare your corn by cutting fresh kernels off the cob or draining canned corn; thaw frozen corn.
  2. In a large bowl, mix sour cream, mayonnaise, and softened cream cheese until creamy.
  3. Stir in shredded cheddar and pepper jack cheeses along with garlic powder, onion powder, smoked paprika, chili powder, salt, and black pepper.
  4. Gently fold in prepared corn and desired optional ingredients.
  5. To serve cold: refrigerate for at least 30 minutes. For hot dip: preheat oven to 375°F (190°C), transfer mixture to a baking dish topped with extra cheese, and bake for 20–25 minutes until bubbly.
