  • 2 cups corn (fresh or frozen; grilled preferred)
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1/2 cup cotija cheese, crumbled
  • 1/4 cup fresh cilantro, chopped
  • 1 green onion, sliced
  • 1 tbsp lime juice
  • 1 tsp chili powder
  • Salt and pepper to taste

Instructions

  1. Cook the rotini pasta in salted boiling water according to package directions until al dente. Drain and rinse under cold water.
  2. If using fresh corn, grill until lightly charred and cool before cutting off the kernels; if using frozen corn, thaw and drain well.
  3. In a large bowl, mix together mayonnaise, sour cream, lime juice, chili powder, salt, and pepper until smooth.
  4. Add cooked pasta, grilled corn, cotija cheese, cilantro, and green onion to the dressing. Toss gently to combine.
  5. Taste and adjust seasoning as needed. Chill in the refrigerator for at least 30 minutes before serving.
  6. Garnish with additional cotija cheese, cilantro sprigs, and a sprinkle of chili powder before serving.
