  • 2 1/4 teaspoons instant yeast
  • 1 cup warm water (110°F/43°C)
  • 1 tablespoon honey or sugar
  • 3 cups all-purpose flour
  • 1 teaspoon salt
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons fresh rosemary, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon sea salt (flaky or coarse)

Instructions

  1. In a large bowl, dissolve the yeast and honey in warm water. Let it sit for about 5 minutes until foamy.
  2. Add flour, salt, and olive oil to the yeast mixture; stir until a sticky dough forms. Cover and let it rise in a warm spot for 45–60 minutes until doubled.
  3. Preheat oven to 375°F (190°C) and grease a muffin tin with olive oil.
  4. Spoon the risen dough into muffin cups until about ¾ full.
  5. Drizzle with olive oil and sprinkle with rosemary, garlic, and flaky sea salt.
  6. Bake for 18–20 minutes until golden brown. Cool slightly before serving.
