  • 3 teaspoons active dry yeast
  • 1/3 cup sugar (70g)
  • 3 3/4 cups all-purpose flour (490g)
  • 1 large egg (or substitute with flaxseed meal mixed with water or unsweetened applesauce)
  • 1.5 teaspoons salt
  • 6 tablespoons softened unsalted butter (85g)
  • 1/4 cup salted butter (57g)
  • 23 finely chopped garlic cloves
  • Fresh parsley for garnish

Instructions

  1. Activate the yeast by stirring warm milk and yeast in a bowl until bubbly.
  2. Combine all ingredients in the bowl: sugar, flour, egg, salt, and softened butter.
  3. Knead the dough on a clean surface for about 15 minutes until smooth.
  4. Place dough in an oiled bowl, cover with cling wrap, and let rise until doubled in size (about 90 minutes).
  5. Shape into 12 equal rolls and place on parchment-lined baking sheet.
  6. Brush with egg wash made from egg yolk and milk before allowing to rise again for 30-45 minutes.
  7. Preheat oven to 350°F (175°C) and bake for 20-22 minutes until golden brown.
  8. Melt salted butter with garlic in a saucepan; brush over warm rolls.
