  • ¼ cup unsweetened cocoa powder

  • 1 teaspoon vanilla extract
  • ½ cup milk
  • ½ cup vegetable oil
  • ½ cup hot coffee
  • 2 cups shredded phyllo dough (kataifi)
  • 2 tablespoons butter
  • 1 cup pistachio cream
  • 4 oz milk or semi-sweet chocolate bar
  • ½ cup heavy cream

Instructions

  1. Preheat your oven to 350℉ and grease your baking pan.
  2. In a large bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add egg, vanilla extract, milk, and vegetable oil to the dry mix; whisk until combined.
  4. Stir in hot coffee until smooth.
  5. Pour batter into the pan and bake for about 25 minutes or until a toothpick comes out clean.
  6. Allow the cake to cool completely for about 10–15 minutes.
  7. Toast chopped kataifi in a pan with butter until golden and crisp; mix with pistachio cream.
  8. For ganache, microwave chopped chocolate with heavy cream for about 45 seconds; whisk until smooth.
  9. Spread the pistachio mixture over the cooled cake and pour ganache on top.
  10. Garnish with additional pistachio cream or crushed nuts if desired.
