  • 67 medium Yukon Gold potatoes
  • ½ white or yellow onion
  • 2 tablespoons salted butter
  • ¼ cup all-purpose flour
  • 1 ½ cups unsweetened almond milk
  • 8 ounces sharp cheddar cheese
  • ½ teaspoon garlic powder
  • ¾ teaspoon salt
  • Freshly ground black pepper
  • ½ cup gruyere cheese
  • ¼ cup grated parmesan

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a 2-quart baking dish.
  2. Layer sliced potatoes and onion in three slanted rows in the dish.
  3. In a saucepan, melt butter over medium heat. Whisk in flour, then gradually add almond milk while whisking until smooth. Bring to a simmer.
  4. Stir in shredded cheddar, garlic powder, salt, and pepper until well combined.
  5. Pour the sauce over the potatoes and onions evenly.
  6. Cover with foil and bake for about 45 minutes.
  7. Remove foil, sprinkle gruyere and parmesan on top, then bake uncovered for an additional 30-45 minutes until bubbly and golden brown.
