  • 8 oz imitation crab (diced)
  • 3 cups cooked white or brown rice
  • 1 cucumber (diced)
  • 1 large avocado (diced)
  • ¼ cup chopped cilantro
  • ¼ cup soy sauce
  • ¼ cup sugar
  • 3 tbsp rice vinegar
  • ¼ cup mayonnaise
  • 1 tbsp Sriracha
  • 1 cup Panko breadcrumbs
  • ¼ cup olive oil

Instructions

  1. Cook rice according to package instructions if not already prepared.
  2. In a small bowl, whisk together soy sauce, sugar, and rice vinegar. Set aside some for drizzling later.
  3. Dice cucumber and avocado, and chop cilantro.
  4. In a skillet over medium heat, combine Panko breadcrumbs and olive oil; stir until golden brown.
  5. Assemble bowls by placing rice at the bottom and topping with imitation crab, cucumber, avocado, cilantro, drizzle of sauce, spicy mayo, and crispy Panko.
