  • ½ cup shredded mozzarella cheese

  • 1 large egg
  • ¼ cup breadcrumbs (preferably panko)
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon paprika
  • ¼ teaspoon salt
  • ⅛ teaspoon black pepper
  • Vegetable or canola oil (for frying)

Instructions

  1. Prepare corn by draining canned corn or thawing and drying frozen corn.
  2. In a large bowl, whisk the egg until combined.
  3. Add flour, cheddar cheese, mozzarella cheese, breadcrumbs, garlic powder, onion powder, paprika, salt, and black pepper; mix until well combined.
  4. Gently fold in the prepared corn until evenly distributed.
  5. Shape the mixture into small balls or discs.
  6. For frying: Heat oil in a deep pan over medium-high heat until it reaches 350°F (175°C). Fry bites for about 2-3 minutes per side until golden brown.
  7. For baking: Preheat oven to 400°F (200°C) and bake on a lined sheet for about 15-20 minutes, flipping halfway through.
